Wine soup

A typical Trentino-Tyrolean dish, the simple but fragrant wine soup requires the use of one of the region's elegant dry white wines.

  • 2 glasses of dry white wine (Pinot Grigio from Trentino or Alto Adige, or Sylvaner from Alto Adige),
  • 2 glasses of milk,
  • 2 egg yolks,
  • a knob of butter,
  • sugar,
  • salt,
  • cinnamon.


Heat the butter in the bottom of a saucepan and then pour in the wine, bringing it to the boil.

Add the egg yolks and a tablespoon of sugar, taking care to stir immediately to prevent the egg from congealing.

Immediately afterwards slowly pour in the milk, adjust the salt and serve on individual plates, flavouring the steaming soup with a sprinkle of cinnamon powder.
