One wine or several wines?
There are those who maintain that one should not 'mix' wines at the table, on pain of terrible headaches or difficulties
This is not true; in fact, exactly the opposite is true: at the table you get more satisfaction the more you manages to match each dish the right wine.
As long as you drink in moderation: one glass per plate is enough.
If anything, the headache comes when it comes to the bill: if for a dinner for two in the famous little restaurant you uncork four bottles, drinking a fingerful of each, you run the risk of finding yourself shelling out a staggering amount of money.
