WHAT ARE THE RULES OF GOOD MATCHING?
White or red?
Who has never heard the fateful question 'white or red?' when seated at a restaurant table?
The question is wrong. Firstly, because you cannot choose a wine without knowing what it will accompany on the table: First you order the dishes and then you choose the wine with which to marry them.
And then to ask 'white or red?' is to unfairly eliminate a third way that exists in the wine world:
that of the rosé wines, that belong to the best oenological heritage of many Italian regions.
